Chuckling here…I’m assuming you are doing this in order to cover over plaster cracks. Not only am I a building contractor, I helped my dad re-do three rooms of his house with just this same problem about 20 years ago. we used 1/4 inch for walls, which is adequate, and 1/2 inch for the ceiling. 1/2 inch on the ceiling because there might be some sag in anything thinner. I personally think you could get away with 3/8 on the ceiling with no problem. concerning installing around the door and window casings (if you have any). Its a simple thing to remove existing casings and moldings, but remember you will have to put in place a 1/4 inch strip of wood to make up the difference before replacing. In the case of my dad’s house, we chose to ‘cut-in’ around all the moldings, leaving them in place. We still ended up with a 1/2 inch reveal where the molding butted up against the drywall.
